This buttery Greek spinach pie recipe has become requested too often to just have it at Christmas time! Layered with phyllo pastry, there is lots of spinach with Feta and Cottage cheeses, fresh dill and a hint of lemon. (No meat in this dish)

Happy Camper meals are back for the summer! This month is a hearty blend of diced potatoes, peppers, onions and mushrooms topped with diced bacon and finally some Vermont white Cheddar cheese, to make it extra scrumptious.
